When meat grrls gather there is always lots of good food to eat. A favorite take away from the last Rendezvous in Texas was the delicious, slightly sweetened leaf lard spread that Farmer Michelle Deschaaf whipped up- literally. Perfect on fresh biscuits made with lard for breakfast, Add onion and apples and you have a German version- schweineschmalz. Michelle and her husband Mike produce mangalitza pigs on the 40 acre family farm in Southwest Michigan, These simple recipes live up to 1936 Meadowbrook Farm's motto- "40% more fat."
Recipe: Sweet Lard Love
1 cup rendered leaf lard
2 Tablespoon honey or maple syrup
salt & freshly ground black pepper
The lard needs to be at room temperature.
Add the honey or syrup and whip it until it emulsifies.
Add salt and pepper to taste.
Serve on hot biscuits or cornbread.
Store in the refrigerator, bring to room temp before using.
